Low Carb Chocolate Peanut Butter Squares Recipe ( Keto )



These easy keto peanut butter squares will satisfy all of your dessert cravings with almost no sugar. Low Carb, low sugar, high fat Peanut Butter Bars make a perfectly delicious keto dessert or fat bomb.

Low Carb Chocolate Peanut Butter Squares


Ingredients:

  • Cooking spray, for pan
  • 1 1/2 c. smooth unsweetened peanut butter
  • 1 1/4 c. coconut flour
  • 1/4 c. keto friendly powdered sugar, such as swerve
  • 1 tsp. pure vanilla extract
  • Pinch kosher salt
  • 2 c. keto friendly chocolate chips
  • 2 tbsp. coconut oil
  • 1 tbsp. Flaky sea salt, for garnish


Directions:

Line an 8"-x-8" baking pan with parchment paper and grease with cooking spray. In a medium bowl, combine peanut butter, coconut flour, powdered sugar, vanilla, and salt. Stir until smooth and pour into prepared pan, smoothing the top with a spatula. Place in freezer for 30 minutes to firm up.

Combine chocolate chips and coconut oil in a medium microwave-safe bowl. Microwave, stirring every 30 seconds, until smooth and pourable. Pour chocolate over peanut butter layer and smooth.

Garnish with flaky sea salt and place in freezer to harden, 2 hours or up to overnight.

When ready to serve, remove peanut butter bars from baking dish and cut into squares.

Healthy Low Carb Key Lime Pie Recipe




The sour of the key limes was perfectly balanced with the sweetness of the greek yogurt and Key Lime Zest. This healthy Key Lime Pie Recipe, used: thick and creamy Greek yogurt, condensed milk, egg yolks, fresh key lime juice and key lime zest.

The sweetness from the homemade healthy condensed milk makes is just perfect.

And the flavor from the fresh key lime juice is amazing!

Healthy Low Carb Key Lime Pie



Ingredients:

Graham Cracker Crust:
  •     2½ cups Graham Cracker Crumbs
  •     ¼ tsp Salt
  •     ⅔ cup Unsweetened Vanilla Almond Milk
  •     1 tsp Natural Butter Flavor

Filling:
  •     one batch heathy Homemade Sweetened Condensed Milk
  •     4 Large Egg Yolks
  •     10g (1 tbs, packed) Organic Corn Starch
  •     57g (¼ cup) Plain, Nonfat Greek Yogurt
  •     1 tsp Key Lime Zest
  •     ¾ cup Key Lime Juice (freshly squeezed)

Directions:

    Preheat the oven to 350 degrees Fahrenheit.
    In a medium-sized bowl, stir together all of the ingredients.  Press the mixture into a 9.5" pie dish.  Bake for 13 minutes, or until fragrant and firm. Let cool while you make the filling.
    In a large bowl, whisk together the condensed milk and egg yolks.  Whisk in the corn starch, then whisk in the yogurt and lime zest.
    Last, whisk in the lime juice.  It will look curdled at first, but just whisk it vigorously and it will become smooth.  Mixture should be very thick, like pudding.  Scoop the mixture into the crust and bake for ~16 minutes, or until set (when you move the pan, the center should jiggle slightly but stay in place, like jello)
    Let cool for ~2 hours, then cover and refrigerate overnight.  Slice, serve, and enjoy!

Easy Snicker Brownies Recipe





Mixing brownies with a classic Snickers bar results in an amazing dessert experience. A thick triple chocolate brownie base, layered with gooey caramel, nutty marshmallow nougat, and topped with creamy chocolate.

Easy Snicker Brownies

Ingredients:

Brownies:
  • 1 box of brownies, family-sized, baked according to package directions in a foil-lined pans

Nougat:
  • 1/4 cup butter, unsalted
  • 1 cup white sugar
  • 1/4 cup evaporated milk (you can DIY your own by mixing 2 1/2 tablespoons of dry nonfat milk powder with 3 tablespoons water)
  • 1 1/2 cups marshmallow fluff
  • 1/4 cup peanut butter
  • 1 teaspoon vanilla extract

Caramel-Peanut Layer:
  •  14 ounces Kraft caramels
  • 1/4 cup heavy whipping cream
  • 1 1/2 cup salted peanuts chopped, roughly chopped

Topping:
  • About 1/4 - 1/2 cup semisweet chocolate chips for drizzling.









Directions:

1. Prepare a 9x13 inch pan of brownies baked in a foil lined baking pan.  Set aside to cool completely.

2. Prepare the nougat.  In a medium saucepan over medium heat, melt butter.  Add evaporated milk and sugar and stir until dissolved.  Bring to a boil and let cook for 5 minutes, stirring occasionally.  Stir in peanut butter, marshmallow fluff, and vanilla, and stir until smooth.  Pour over brownies, smooth with an offset spatula, and set aside to cool.

3. Prepare the caramel-peanut layer. In a small saucepan over medium-low heat combine the unwrapped caramels and heavy cream.  Stir occasionally until smooth.  Once smooth, stir in peanuts.  Once the nougat layer is cool (or mostly cool), pour the hot caramel over the nougat.  Spread evenly with an offset spatuala and set aside to cool.

4. Melt the chocolate over a double boiler or in a microwave (at 30 second increments at 50% power, stirring between rounds, until melted and smooth).  Put chocolate in a small zip top bag, snip a small hole in the corner, and drizzle over caramel layer.

5. Refrigerate for a few hours or over night so that everything can mingle together.  Before cutting, let sit at room temperature for 30 minutes.  Cut with a hot knife (I ran a metal knife under hot running water, quickly dried with a paper towel), cleaning knife between cuts as needed.

Eat and be amazed at a new and improved Snickers bar.

Easy Apple Crisp Shortbread Bars Recipe



Imagine the taste of your favorite apple pie, combined with the taste of your favorite apple cobbler, served on a homemade shortbread crust. That's exactly what these Apple Cobbler Shortbread Squares taste like! This is a great apple dessert bar to make in the fall or anytime you get a craving for something apple-icious!

 
Apple Crisp Shortbread Bars

Ingredients:

Shortbread Base:
  •     ½ cup unsalted butter, room temperature
  •     ¼ cup sugar
  •     1 teaspoon vanilla extract
  •     ¼ teaspoon salt
  •     1 cup all-purpose flour
   
Apple Filling:
  •     3 large apples, peeled and thinly sliced
  •     2 Tablespoons all-purpose flour
  •     2 Tablespoons sugar
  •     1 teaspoon ground cinnamon
  •     ¼ teaspoon ground nutmeg
   
Topping:
  •     ½ cup all purpose flour
  •     ¾ cup brown sugar
  •     ¼ cup butter - melted or room temp to cut in.


Directions:


    Preheat your oven to 300 degrees F and line an 8x8 baking pan with parchment paper. Be sure to bring the parchment up the sides as it makes it easier to lift out later.
   
Shortbread Base:
    Place butter into your mixer and turn on high for 5 minutes or until the butter turns white rather than yellow, that's how you'll know it's creamed. Next mix in the sugar, vanilla, and salt. Once combined, add in the flour and stir well. Press the mixture into the parchment lined pan and bake in the pre-heated oven for 15 minutes.
   
Apple Filling:
    In a bowl, combine the apples, flour, sugar, cinnamon and nutmeg until the apples are well coated.
   
Topping:
    Mix flour, ¾ up brown sugar. Cut in the butter and knead together.
    Remove the crust from the oven and turn the heat up to 350 degrees F. Sprinkle one half of the Topping over the short bread, then layer the apples on top. You will have multiple layers so try to keep it level. Once this is finished, sprinkle the remainder of the Topping evenly on top and place in the oven to bake for 30 minutes.
    Remove from the oven and allow to cool fully before placing in the fridge to set for at least 2 hours. Once it's set, remove from the baking dish by lifting out the parchment paper and cut into 16 squares.

Mississippi Mud Brownies


Ingredients:

For the brownies:
  •     1/3 cup unsweetened cocoa powder
  •     1/2 cup oil (vegetable or canola oil)
  •     1/2 cup butter , softened
  •     2 cups granulated sugar
  •     4 large eggs
  •     2 teaspoons vanilla extract
  •     1 1/2 cups all-purpose flour
  •     1 teaspoon salt
  •     3 cups mini marshmallows

For the frosting:

  •     1/2 cup melted butter
  •     1/3 cup unsweetened cocoa powder
  •     1/3 cup evaporated milk
  •     1 teaspoon vanilla extract
  •     3 - 3 1/2 cups powdered sugar

Directions:

    Preheat oven to 350 degrees F. Grease a 9x13'' pan with non-stick cooking spray.

    In a large mixing bowl, pour oil over cocoa powder and mix. Add softened butter and mix until smooth. Add sugar and mix for 1 minute.

    Add eggs, one at a time, mixing after each addition. Add vanilla and mix. Add flour and salt and stir to combine.

    Pour batter into prepared pan. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
    Remove brownies from the oven and sprinkle the marshmallows evenly on top. Return to the oven for 2-3 minutes or until the marshmallows are puffed. Remove from oven and allow them to cool completely.
    Once brownies are cool, make the frosting.

For the frosting:

    Add melted butter, cocoa powdered, evaporated milk, vanilla, and 2 cups of powdered sugar to a mixing bowl and beat with electric beaters until smooth.

    Add more powdered sugar, a cup at a time, mixing well, until you reach your desired frosting consistency. I usually use about 3 1/4 cups powdered sugar.
    Spread frosting over the cooled brownies and cut into squares. I've found a plastic knife works best to cut them, or if you make them 1 day in advance they are much easier to cut.

Who says you can't eat brownies when you're on the keto diet?! These easy keto flourless avocado brownies are the best. We pack them with mashed avocados so they get a silky texture while packing in good-for-you fats. We also add some unsweetened almond butter, and cashew butter, which will help deliver healthy fats and a nice nutty flavor.

Easy Low Carb Flourless Avocado Brownies

Ingredients:
  •     2 large eggs
  •     1 medium, ripe, hass avocado (3/4 cup)
  •     1/4 cup melted ghee (lard or coconut oil)
  •     3-4 tbsp unsweetened, unsalted almond butter, cashew butter (or sunflower seed butter for nut-free)
  •     1/2 tsp baking soda
  •     1/4 tsp salt
  •     1/3 cup Lakanto  (erythritol+ monk fruit) or preferred granulated sweetener (xylitol, coconut palm, maple sugar etc)
  •     1/3 cup cacao powder
  •     1 tsp vanilla extract
  •     2 tablespoons gelatin (optional, makes them chewy)
  •     1/2 cup low carb chocolate chips or chopped up chocolate


Directions:

  1.     Pre-heat oven to 350F.
  2.     Line a small baking dish, like a loaf pan with parchment paper.
  3.     In the bowl of your food processor combine all of the ingredients.
  4.     Blend om medium, low power until just smooth. No more than 30 seconds. If you overmix the batter they will be cakey. You can use a spatula to scrape down the mix and then fold it together, mashing up any chucks of avocado left.
  5.     Use the spatula to transfer the batter to the baking dish and smooth it out evenly.
  6.     Top with fun things.  I’m partial to chocolate chips!
  7.     Bake for 25 minutes. Until the edges begin to separate from the sides.
  8.     Remove from the oven and let it cool for 15 minutes before handling.
  9.     Pick it up, carefully, by the parchment paper and set it on a cutting board.
  10.     Cut into 8 squares! Enjoy! Store leftovers in tupperware in the fridge for up to a week.

Easy No Bake Ferrero Rocher Keto Fat Bombs




These Ferrero Rocher balls are a delicious treat for you to try and only coming in at 55 calories per ball! Very easy. A handful of ingredients. And ready to pop into your mouth within 10 minutes start to finish.. Or 5 minutes if you're happy to roll and eat as you go! :D

No Bake Ferrero Rocher Keto Fat Bombs

Ingredients:
  • ¾ cup (60g) ground hazelnuts
  •  3 tbsp (45ml) melted coconut oil
  •  2 tbsp (16g) powdered erythritol (confectioners' erythritol)
  •  1 oz (30g) melted sugar-free chocolate (or chocolate with at least 85% cacoa content)
  •  ½ tbsp (4g) baking cacoa powder (dutch processed cacoa powder)
  •  ½ tsp sugar-free vanilla extract
  •  chopped hazelnuts & a few whole hazelnuts


Directions:

Melt the sugar-free chocolate using a double boiler.
Melt the coconut oil if necessary.

Add the ground hazelnuts, melted coconut oil, powdered erythritol, baking cocoa powder & vanilla extract into a food processor and blend on high for approx. 30-45 seconds.
Add the melted chocolate and blend for another 15 seconds.

Scrape off chunky bits from the sides and the bottom of the food processor and blend again for a few seconds if necessary.


Place the mass in the freezer and chill for approx. 10 minutes.


After the fat bomb mass has cooled down, take it out of the freezer and start to form small balls with your hands.
Add a whole hazelnut into the middle of the ball and roll it in chopped hazelnuts afterward.


You can serve the fat bombs immediately or store covered in plastic wrap at room temperature for approx. 2-3 days.

Easy No-Bake Eclair Cake Recipe




This No-Bake Eclair Cake is very easy to make and delicious! .. but a little too sweet! If I make again with probably add some raspberries or another fresh fruit to cut the sweetness a little. Does take overnight to set so make ahead of time. I loved it as love eclairs!


Easy No-Bake Eclair Cake

Ingredients:
  •     2 3.5 oz package of instant vanilla pudding mix
  •     1 8 oz container of whipped topping (COOL WHIP) thawed
  •     3 cups milk
  •     2 package of graham cracker squares
  •     1 tub of chocolate frosting


Directions:

  1.  In a medium bowl, mix together the pudding mix, milk and Cool Whip.
     In an 9 x 13 baking dish, arrange a single layer of graham cracker squares on the bottom.
  2. You may have to break them up a bit to get enough crackers to cover the bottom of your dish.
  3.  Spread half of the pudding mixture on top of the crackers.
  4. Layer another layer of graham crackers over the pudding mixture.
  5. Then layer the other half of the pudding mixture on top of crackers.
  6. Top with a final layer of graham crackers.
  7. Put plastic wrap over dish and put in fridge for about 30 min to an hour to allow pudding to set.
     
  8. When ready, put the tub of chocolate frosting in the microwave for about 15 seconds to soften (remove lid and aluminum foil top before microwaving).
     
  9. Take out and stir frosting. It should be easily spreadable now.
  10. Remove plastic wrap from dish and evenly spread chocolate frosting all over the top layer of graham crackers.
  11. Place plastic wrap over top of dish and put back in fridge.
  12. Now, forget about this dessert until tomorrow. This dessert gets better over time. The graham crackers need time to soften up.
  13. When ready, slice and serve!

These No Bake Banana Split Dessert are SO simple to make, no baking required and you can do it ahead of time so it’s easy if you are having guests or need to take it along somewhere!

No Bake Banana Split Dessert

Ingredients:
  •     1 stick butter, melted
  •     1 box graham cracker crumbs
  •     1 (8 oz) cream cheese, softened
  •     1/4 cups butter, softened
  •     3 cups powdered sugar
  •     4 bananas, sliced
  •     1 (20 oz) can crushed pineapple, drained
  •     1 (16 ounce) container Cool-Whip, thawed or 1 1/2 cups heavy whipping cream
  •     1 (4 ounce) jar maraschino cherries, stemmed
  •     1 cup walnuts or pecans, chopped
  •     hot fudge sauce, slightly warmed
  •     1 tablespoon rainbow sprinkles

Directions:

  1.     In a medium bowl, combine graham cracker crumbs and melted butter.
  2.     Firmly press into a crust in the bottom of 9x13 glass or porcelain dish, let it chill in the freezer for about 10 minutes to firm up.
  3.     In a medium bowl, cream together the cream cheese, 1/4 cups butter, and the powdered sugar until creamy, about 5 minutes.
  4.     Don’t be tempted to add milk, it will take a few minutes, but the mixture will blend up perfectly!
  5.     Spread the cream cheese mixture over the cooled graham cracker crust.
  6.     Add a layer of sliced bananas over the cream cheese mixture.
  7.     Spread pineapple chunks evenly over the bananas.
  8.     Evenly spread the Cool-Whip over the pineapple-banana layer using a rubber spatula.
  9.     Garnish with the pecans/walnuts and maraschino cherries.
  10.     Drizzle the chocolate fudge over the dessert and then sprinkle the rainbow sprinkles over the surface.
  11.     Chill for at least 4 hours before cutting to allow the layers to set.

Raspberry Chocolate Cupcakes Recipe


These Raspberry Chocolate Cupcakes are a classic flavor combination! I used my favorite chocolate cupcake and topped it with a delicious raspberry icing that uses fresh raspberry puree. Delish!

Ingredients
For the Cupcαkes:

  • 1 1/2 cups αll-purpose flour
  • 1/2 cup grαnulαted sugαr
  • 1/2 cup brown sugαr
  • 3/4 teαspoon bαking sodα
  • 1/4 teαspoon sαlt
  • 4 tαblespoons butter, cut into cubes
  • 2 ounces semi-sweet bαking chocolαte, chopped
  • 1/4 cup cocoα powder
  • 1/2 cup boiling wαter
  • 1/2 cup buttermilk
  • 1/3 cup sour creαm
  • 1 teαspoon vαnillα
  • 2 lαrge eggs

For the Frosting

  • 1/2 cup fresh rαspberries
  • 1/2 cup butter
  • 4 ounces creαm cheese
  • 3 1/2 to 4 cups powdered sugαr
  • 1/4 teαspoon vαnillα
  • For Gαnαche:
  • 1/2 cup whipping creαm
  • 4 ounces semi-sweet chocolαte

For Gαrnish:

  • 15 rαspberries


Directions
For the Cupcαkes:

  1. Preheαt oven to 350 degrees F. Line α muffin tin with 15 cupcαke liners.
  2. Mix flour, sugαrs, bαking sodα, αnd sαlt together αnd set αside.
  3. Plαce butter, chocolαte, αnd cocoα together in α bowl αnd pour boiling wαter on top. Cover with plαstic wrαp αnd let sit two minutes. Mix until smooth αnd then αdd in the buttermilk, sour creαm, vαnillα, αnd eggs. Whisk the liquid ingredients into the dry until smooth.
  4. Pour 1/4 cup bαtter into eαch pαper liner. Bαke for 17-20 minutes or until toothpick comes out cleαn. Leαve cupcαkes in tin for 5 minutes before removing onto α cooling rαck. Meαnwhile, prepαre the frosting αnd gαnαche.

For the Frosting:

  1. Puree the 1/2 cup rαspberries in α food process, blender, or with α hαnd blender. If you don't wαnt seeds in your frosting, press the puree through α strαiner held over α bowl (this tαkes α few minutes). You should be left with 3-4 tαblespoons seed free rαspberry puree. I αdded some seeds bαck becαuse I thought it looked pretty but you cαn just discαrd the seeds.
  2. Beαt butter αnd creαm cheese together until smooth. αdd powdered sugαr α little αt α time while beαting αnd creαm for 2-3 minutes. αdd rαspberry puree αnd vαnillα αnd beαt until completely combined. Plαce frosting into α pαstry bαg fitted with α piping tip.

For the Gαnαche:

  1. Heαt whipping creαm in the microwαve for 40-60 seconds until hot.  Plαce chocolαte in α bowl αnd pour hot whipping creαm on top. Let it sit for two minutes αnd then stir until smooth.  Let the gαnαche come to room temperαture (αbout 5-10 minutes) before αpplying to cupcαkes.

To αssemble:

  1. Once the cupcαkes hαve cooled, spoon 1-2 teαspoons gαnαche onto eαch cupcαke, spreαding it to αlmost the edge of the cupcαke. Pipe frosting on top of eαch cupcαke αnd then spoon 1 teαspoon over the top αnd press α berry in. Serve immediαtely. Cupcαkes with berries on thαt αre not eαten within α few hours should be refrigerαted. αnother option is to store the cupcαkes αt room temperαture in αn αir tight contαiner αnd αdd the rαspberries just before serving.

French Toast is a classic breakfast staple but when you’re feeding your family or a larger group, it can be tedious to stand at the stove monitoring individual pieces of french toast as it cooks.

INGREDIENTS

  • 1 loαf French breαd, cut into αbout 8 slices αbout ¾ inch thick slices
  • 6 eggs
  • 2 cups hαlf-αnd-hαlf
  • ½ cup sugαr
  • 1 teαspoon cinnαmon
  • ½ teαspoon sαlt
  • 1½ teαspoons vαnillα extrαct
  • Gαrnish: mαple syrup αnd powdered sugαr

INSTRUCTIONS

  1. Sprαy α 9x13 inch glαss bαking pαn with non-stick vegetαble sprαy.
  2. αrrαnge breαd slices in pαn in α single lαyer; set αside.
  3. In α bowl, whisk together remαining ingredients except gαrnish until completely smooth.
  4. Pour evenly over breαd slices until covered.
  5. Cover αnd chill overnight, or until most liquid is αbsorbed.
  6. Bαke, uncovered, on center rαck of oven αt 400 degrees for 40 - 45 minutes, until puffy αnd golden.
  7. Gαrnish αs desired.
